Place

Season
Nature does not produce identical harvests. Rainfall changes. Flowering cycles shift. Temperatures vary. These variations are a signature of nature, visible in flavour, aroma, colour and texture.
Character
Many natural ingredients vary from batch to batch. When ingredients remain close to their source, some variation is both natural and expected. Character is not the opposite of quality. It is often a reflection of it.
