Origin & Source

From the Cane Fields of Uttarakhand

Our Organic Jaggery Cubes begin in the fertile agricultural landscapes of Uttarakhand, where sugarcane has been cultivated for generations.

Made from organically grown sugarcane, these cubes represent a simple and traditional approach to sweetness — one that remains closely connected to the ingredient from which it is made.

We believe jaggery is more than a substitute for sugar. Like honey, rice, or tea, it is an ingredient in its own right. The variety of sugarcane, the growing conditions, the season of harvest, and the way it is prepared all contribute to its character.

The differences may be subtle, but they are worth paying attention to.

The less we take away, the more there is to taste.

How we make it

The process begins with freshly harvested sugarcane.

The cane is crushed to extract its juice, which is then slowly simmered in traditional open pans. As the liquid reduces, its natural sugars concentrate and develop their characteristic colour and flavour.

Once the desired consistency is reached, the jaggery is poured into moulds, cooled naturally, and formed into convenient cubes.

No refining. No bleaching. No unnecessary processing.

Just sugarcane, transformed through heat, time, and craftsmanship.

Our Approach

  • Organically grown sugarcane
  • Traditional open-pan preparation
  • Slow concentration of cane juice
  • Moulded into convenient cubes
  • Minimal processing

The closer we stay to the source, the less there is to explain.

Nutrition

Jaggery has been used as a sweetener for generations. Ours is made from organically grown sugarcane and produced using traditional open-pan methods with minimal processing.

It remains a source of sugar and should be enjoyed as such. We value jaggery not because it is a substitute for sugar, but because it is a less refined expression of it.

Unlike refined white sugar, traditional jaggery retains naturally occurring molasses, which contributes to its characteristic colour and flavour, along with small amounts of vitamins, minerals, and other naturally occurring compounds present in sugarcane.

As with any agricultural product, colour, flavour, and texture may vary slightly from one batch to the next. These differences reflect the natural variability of the harvest rather than a process designed to eliminate it.

  • Naturally occurring sugars from sugarcane
